Lemon Ricotta and Mozzarella Pizza

Lemon Ricotta & Mozzarella Pizza

Inspired by @blueribbon_encinitas

Ingredients:

  • 1 Cappello’s Naked Pizza Crust

  • 1 ½ cups shredded @bufcreamery Mozzarella di Bufala

  • ⅓ cup @organicvalley Ricotta Cheese

  • 1 lemon, zested

  • ¼ cup thinly sliced red onion

  • A few fresh basil leaves (added after baking)

  • Salt & pepper, to taste

  • Olive oil, for brushing

Instructions:

  1. Preheat oven to 425°F with a baking sheet inside to heat up.

  2. Prepare the crust: Brush the pizza crust lightly with olive oil.

  3. Assemble the toppings: Evenly sprinkle the shredded mozzarella over the crust.

  4. In a small bowl, mix the ricotta with a pinch of salt, then dollop it onto the pizza.

  5. Sprinkle lemon zest over the cheese and arrange the sliced red onion on top.

  6. Bake for about 13 minutes, or until the cheese is bubbly and the crust is golden brown.

  7. Let the pizza cool slightly, then top with fresh basil leaves.

  8. Slice & enjoy!
