Plantain Crusted Fish Tacos
These fish tacos are grain, gluten, and dairy free and are such a crowd pleaser!
For the Fish:
-1 lb wild caught cod cut into strips (skinned and deboned)
-1 bag barnana sea salt plantain chips
-1 tsp dried onion flakes
-1 tsp garlic powder
-1 tsp salt
-1 egg (for egg wash)
-ghee, coconut, or avocado oil for pan frying
For the Slaw:
-1/2 purple cabbage shredded
-1 jalapeño - seeded and minced
-2 juicy limes
-drizzle of olive oil
-1-2 micro planned garlic cloves
-1/3 cup thinly sliced scallion
-1/2 cup chopped cilantro (add before serving)
-salt to taste
For the Spicy Avocado Sauce:
-1 medium/ large avocado
-1/4 cup of MCT, avocado or olive oil.
-1/8th-1/4 cup of fresh lime juice
-1/4th cup filtered water
-1/3 cup of cilantro
-Jalapeño - amount depends on how spicy you want it, I normally do half a small jalapeño.
-1-2 cloves of garlic
-1/2 tsp of salt (or to taste)
For the Tortillas: I used siete cassava and chia tortillas!
First make the slaw: Add all ingredients (except cilantro) to a bowl and mix together then let marinate in the fridge. I love to make this a few hours before! Add cilantro right before serving!
For the pan fried fish: First make sure your cod is skinned and deboned! Then cut into strips or nuggets and set aside. In a blender or food processor, add in a bag of Banana plantain chips and grind them up. You could also put the chips in a plastic bag and use a rolling pin! You want this to be on the finer side- not as light as a flour but also you don’t want to see pieces of noticeable chips. Transfer the ground up chips to a shallow bowl with garlic powder, onion flakes, and salt // pepper. In a separate bowl whisk an egg and set aside. Coat the cod strips with the egg wash then dredge into the plantain mixture. Once fully coated set aside and start heating up your pan over medium heat with some ghee, coconut, or avocado oil. I prefer these fats because of their higher smoke point. Cook for 3 minutes on each side then set aside on a paper towel. I like to wipe the pan in between batches and add a bit more fat! Right before serving, heat up your tortillas! Put the pan fried fish on the tortilla, add on some slaw, a dollop of the spicy avocado sauce and a little chopped cilantro! ENJOY!
