7 cups sweet potato- peeled and diced
3 cups apples- peeled and diced
1 onion - diced
6-7 cups of chicken broth (add more if needed) - I love using homemade bone broth or kettle & fire chicken broth
1/2 cup coconut milk
3 TBSP grated ginger (divided)
2 TBSP coconut oil
salt to taste
Peel and chop your sweet potatoes and apples, dice your onion, and grate your ginger! This always makes the whole process of cooking a lot easier to have everything prepped.
In a large pot over medium heat, start sautéing onion and 1 TBSP of grated ginger in coconut oil (or olive. avocado oil, ghee or butter). Once onions become translucent, add in the peeled and chopped apples and sweet potatoes, season with salt and sauté for a couple of minutes. Then add broth and coconut milk and another 1 TBSP of ginger. Bring to a simmer and cover with a lid and simmer until sweet potatoes and apples are very tender. Add the remaining 1 TBSP of ginger then transfer to a blender and blend until smooth. Don’t forget to season with salt along the way! Enjoy!
