Turkey Lettuce Cups 

  • 2 TBSP coconut oil 

  • 1/2 cup scallions (green part)

  • 3 cloves of garlic minced (omit if low fodmap)

  • 1 pound ground turkey (or chicken)

  • 1/4 cup coconut aminos 

  • 1/2 tsp fish sauce (red boat fish sauce)

  • 1 tsp sesame oil 

  • 1/4 -1/2 ground ginger or 1 TBSP fresh grated

  • 1/2 cup Spinach or kale 

  • Salt and pepper to taste 

  • Cilantro

  • Lime

Heat coconut oil in a sauté pan over medium/ medium low heat. Add in your scallions and garlic. Once fragrant, add in your ground turkey or chicken and cook through. Season with Salt. Then add in your shredded carrot. Once everything is combined add in the coconut aminos, fish sauce, ginger, and sesame oil. Add in your green if you want now. Serve in butter lettuce cups with a side of white rice! Top with cilantro and lime. ENJOY! 

This is AIP, gluten, and dairy free. Can be low fod-map without the garlic.
