GF Turkey Lasagna

  • 1 finely diced small/medium onion

  • 5 cloves minced garlic

  • 1 lb ground turkey

  • 2 tbsp Italian seasoning

  • 1 tbsp dried oregano

  • 1 tbsp dried basil

  • 1 1/2 tsp fennel seeds

  • Red pepper flakes to taste

  • 24 oz strained tomatoes (I use bionaturae)

  • 6 sheets jovial GF lasagna sheets (I have only used this brand for this recipe and it works perfect)

  • 16 oz Mozzarella cheese log cut into slices

  • 1 cup ricotta cheese

  • 1 egg

  • 1/4th cup Parmesan cheese + extra for topping

  • Salt and pepper to taste

  • 1 tbsp oil of your choice - olive oil, ghee, butter, avocado oil


Preheat oven to 375 degrees.


Start by heating oil in a large sided skillet or large pot over medium heat. Once oil is hot, add in onion and garlic and sauté until onions are translucent (about 3-5 minutes). Then add in your ground turkey meat and season with salt and pepper breaking it apart as it cooks. Once turkey is no longer pink and cooked through, add in the Italian seasoning, oregano, basil, and fennel and stir to combine. Add in the strained tomatoes and bring sauce to a light simmer and cook for at least 20-30 minutes so flavors can meld together. Season again with salt and pepper to taste.

Now prep the rest of the ingredients. In a small bowl, mix together egg, ricotta, parmesan cheese, and a little bit of salt and pepper. Save some of the parmesan cheese to sprinkle over the top of the lasagna at the end. Then slice up the mozzarella cheese if yours isn’t pre cut.

Now let’s assemble the lasagna! I used a roughly 8x14 (3qt) baking dish but a 9x13 will work fine! Pour 1 ladle of the meat sauce into the bottom of the baking dish and spread to evenly coat the dish. Then top with 3 of the uncooked lasagna sheets.  I do 2 side by side and then 1 perpendicular at the bottom. Next, add some of the ricotta mixture on top of the noodles. We are doing 2 layers of noodles for this recipe, so use your judgement when diving up sauce, ricotta mixture and mozzarella. Next add a layer of meat sauce and top with some of the slices of mozzarella. Then do another noodle layer, followed by more ricotta, meat sauce, mozzarella, and sprinkle some parmesan cheese on top. I have also done this recipe multiple times doing meat sauce, ricotta, then mozzarella. I dont think the order really matters! Cover with aluminum foil and bake for 45-50 minutes and then uncover and broil for about 2-5 minutes. Watch it carefully when broiling. Let cool and then serve. ENJOY!
