Plantain Crusted Chicken Nuggets

-2 chicken breasts (around 1lb) cut up into 1-2 inch pieces

-1 bag of ground up barnana plantain chips 

-1 tsp garlic powder

-1 tsp dried onion flakes

-salt and pepper to taste

-1 egg (for egg wash)


Turn oven to 425 degrees. Grab a sheet tray and line it with parchment paper. In a blender or food processor, add a bag of barnana plantain chips and grind them up. Transfer the ground up chips to a bowl with garlic powder, onion flakes, and salt // pepper.  In a separate bowl whisk an egg and set aside. Cut up your chicken breasts into “nugget” sized pieces. Coat the chicken pieces with the egg wash then dredge into the plantain mixture. Once coated, place on the sheet tray. Bake for 35 or so minutes. Flip half way through. This recipe can easily be doubled! ALSO these can be frozen and reheated in the oven!
