Banana Date Bread Muffins

Wet Ingredients

  • 3 ripe bananas

  • 1 cup packed pitted medjool dates (16-20)

  • 3/4th cup hot water

  • 1 tbsp vanilla extract

  • 3 eggs


Dry Ingredients

  • 1 cup cassava flour

  • 1 cup almond flour

  • 1 1/2 tsp baking soda

  • 1 tbsp cinnamon

  • 1/2 tsp salt


  • Optional add ins: chopped nuts or chocolate chips


Preheat oven to 350 degrees and line a muffin pan with muffin liners. This makes 12 full muffins.


Start by adding 3/4rd cup hot water to a small bowl with your pitted dates. Soak for at least 10 minutes. In a blender add in the dates with water, bananas, eggs, and vanilla extract and blend until smooth then set aside.


In a large bowl add cassava flour, almond flour, baking soda, cinnamon, and salt. Slowly pour in banana mixture from blender into dry ingredients and mix until combined! The batter will be a bit thick.


Scoop batter into muffin liners (I like to use an ice cream scooper for this) and bake for 30-35 minutes!
