Grain, Nut, and Refined Sugar Free Banana Bread
-3 mashed very ripe bananas
-3 eggs
-1/4 cup coconut oil (melted then cooled)
-1 tsp vanilla
-3/4 cup maple syrup
-1 cup cassava flour
-1/2 cup coconut flour
-1 tsp baking soda
-1 TBSP cinnamon
-1/2 tsp salt
Preheat oven to 350 degrees Fahrenheit. Line a loaf pan with parchment paper. In a large bowl, whisk together eggs, mashed bananas, coconut oil, vanilla, and maple syrup. In a separate bowl, mix together cassava flour, coconut flour, baking soda, cinnamon and salt. Slowly stir dry ingredients into wet until incorporated. The batter will be on the thicker side. Add batter to the parchment lined loaf pan and spread evenly. Bake for 58-60 minutes to then remove and let it completely cool before slicing or removing from loaf pan. ENJOY!
