Mexican Shredded Beef, Jalapeño Lime Sweet Potato Rice, and Spicy Avocado Sauce MEXICAN SHREDDED BEEF2 lbs grass-fed chuck roast1 TBSP + 2 TSP chili powder1 TBSP cumin1 TBSP oregano1 TBSP salt + salt for seasoning meatPepper to taste2 TBSP ghee, avocado, or coconut oil1 jar (16 oz crushed tomatoes - I love @jovial)1 cup diced onion or shallot3-5 cloves minced garlicTurn your instant pot on sauté mode and add your fat of choice. Season the chuck roast with 2 tsp chili powder (1 tsp per side), salt, and pepper. Sear meat on both sides then set aside. Add in onion and garlic and sauté until slightly tender. Add in jar of crushed tomatoes, 1 TBSP chili powder, 1 TBSP cumin, 1 TBSP oregano, and 1 TBSP salt. Mix everything together then add back in the chuck roast and cover with the tomato mixture. Put lid on and set to sealing. Set IP to pressure cook for 1 hour (or 25-30 minutes per pound of meat. Let come down to pressure naturally. Then remove and shred beef. Pour some of the cooking liquid over top.Jalapeño Lime Sweet Potato Rice1 TBSP grass-fed butter, ghee, or coconut oil.1 shallot or 1/2 a small onion2 cloves of garlic1 seeded jalapeño (add some seeds in if you want that heat)2 small/medium sweet potatoes1/2 cup chopped cilantro1 lime juicedStart by sautéing shallot, garlic, and jalapeño. While that is cooking, spiralize some sweet potatoes. Then add that into the onion, garlic, and jalapeño mixture. Continue to sauté. Add a splash of broth or water and cover lid. Once noodles are tender, use a spoon to break up the sweet potato to turn into “rice”. Turn off heat and add in some cilantro and lime juice.Spicy Avocado Sauce1 medium/ large avocado1/4 cup of extra virgin olive oil1/8th-1/4 cup of fresh lime juice1/4th cup filtered water1/3 cup of cilantroJalapeño - amount depends on how spicy you want it.
