Roasted Salmon Salad with Spicy Avocado Dressing Roasted Salmon Salad with Spicy Avocado Dressing For the dressing- This is basically a spin on my avocado dressing with different flavors. It’s perfect as a dressing, dip, or as a sauce! Add all ingredients to a blender and blend until smooth.1 medium/ large avocado1/4 cup of MCT oil or extra virgin olive oil 1/8th-1/4 cup of fresh lime juice1/4th cup filtered water1/3 cup of cilantroJalapeño - amount depends on how spicy you want it. Add a bit and adjust to your palette! Avoid seeds if you don’t want spicy1-2 cloves of garlic1/2 tsp of salt (or to taste)For the salad- romaine, shredded purple cabbage, thinly sliced bell pepper, and chopped cilantro but feel free to add whatever you like or have on hand.For the salmon- preheat oven to 425. Place salmon on a parchment lined sheet tray and put small cubes of butter, salt, and pepper over the salmon. Roast for 10-12 minutes and then broil for 1-2 minutes. Depends a bit on the size of your fish! You could also grill or pan sear your salmon if that’s more your vibe!
