Watercress, Bacon, Avocado Salad with Mustard-Horseradish Dressing

Mustard-Horseradish Dressing

2 tbsps of Stone Ground or Dijon mustard.

2 tbsps of Horseradish (I used Gold’s prepared horseradish)

5 tbsps of Extra Virgin Olive Oil

2 tbsps of Lemon Juice

2 Heaping tbsps of Parsley

2 Heaping tbsps of Scallions

1/4 tsp Salt

Pepper

Salad

2 bunches of Watercress - trimmed

1 large cubed Avocado 

4 slices Organic Pasture Raised Bacon

salt and pepper to taste 

In blender, add all dressing ingredients and blend. I use my magic bullet blender for this and it works great! This will make more than what is needed for this salad. Cook bacon in a skillet (could also use turkey bacon or smoked salmon) and set aside. Add 2 heaping tablespoons of dressing to a mixing bowl and throw in your trimmed watercress, avocado and half of the bacon (crumbled). Gently fold everything together with your hands. Plate and sprinkle on the remaining crumbled bacon. This serves 2.
