Eggs Benedict over Potato Cakes

Potato Cakes

2 cups chilled mashed potatoes (left overs work great here - I typically do cooked potato with broth and butter or ghee)

2 organic pasture raised eggs

3 tbsp of cassava flour - (the consistency of mashed potatoes can vary so add additional cassava flour if the mixture is too wet to form into a patties)

1.5 tsp of garlic powder

1/3 cup of thinly sliced scallions (green part)

1/4 cup of chopped parsley

Salt and Pepper to taste

Mix all your ingredients together then form into patties (using about 1/4th to 1/3rd cup of the mixture) and pan fry. I used a cast iron and cooked in ghee. 

Hollandaise Sauce

3 egg yolks

1 tbsp lemon juice

1 stick of melted butter

Salt and pepper to taste

Add the egg yolks, lemon juice, and salt into a blender and blend for 5-10 seconds until combined. With the blender running on medium, slowly pour the hot butter into the mixture until it's emulsified.

Eggs

Fried or poached eggs works for the recipe.

Greens (optional)

I served with sautéed kale.
